Ingredients

  • 3 beets

  • 3 teaspoons ground black mustard seeds
  • 2 teaspoons salt

  • 1/2 teaspoon ground red pepper (cayenne)

  • 5 cups water

Directions

  1. Wash and peel the beets. Cut off the two ends. Slice the beet into 1/4 inch circles. Cut each circle in half

  2. Put the cut beets in a large pitcher. Add the ground black mustard seeds, salt and ground red pepper

  3. Add water, mix together, and cover with plastic wrap

  4. Place the pitcher by a sunny window for 3 days

  5. You will see the color start to turn a beautiful deep burgundy, and bubbles and froth start to form on top, which indicates the fermentation process has started

  6. You can take a peek, but keep it covered

  7. After 3 days, mix well and put the pitcher in the fridge to chill

  8. Enjoy a small cup as you like. It will keep in the fridge for 2 weeks
