Pat is loving soup season and is so excited to share this new Autumnal Harvest soup recipe with you! The base for this soup is seasonal at Trader Joe's, so don't worry if you can't find it! You can use any tomato or butternut squash soup! Pat can't get enough of the fall flavors this soup brings and hopes you add this soup to your soup rotation and enjoy!
1 jar Trader Joe's Autumnal Harvest Soup or Butternut Squash Soup
1 pound cooked chicken or turkey sausage
1 cup sliced carrots
1 small diced onion
2 cloves minced garlic
3 sage leaves finely chopped
1 cup chicken broth
1 cup milk or half and half
1 package butternut squash ravioli
2 cups chopped kale
Salt and pepper to taste
Goat cheese crumbles for serving (optional)
Directions
Cook chicken sausage and drain any excess grease. Add in carrots, onions, garlic, salt and pepper, and minced sage. Sauté for a few minutes until veggies begin to soften
Pour in soup, half and half, and chicken broth and bring to a simmer. Cover and simmer for 10 to 15 minutes until veggies are tender
Add in butternut squash ravioli and cook 3 to 5 minutes until tender. Mix in chopped kale
Serve with crumbled goat cheese or Parmesan and enjoy!
