Springtime Ladybug Crostini
Ingredients
Cherry tomatoes
Mozarella Log
Fresh basil leaves
Balsamic glaze
Black or Kalmata olives
Baguette
Olive Oil
Vegan Kale, Cashew & Basil Pesto
Directions
Slice baguette and place on a baking sheet. Lightly drizzle with olive oil and toast in the oven at 400°F for 5–7 minutes, until lightly golden.
Spread a thin layer of Vegan Kale, Cashew & Basil Pesto on each toasted slice.
Add a slice or piece of fresh mozzarella on top of the pesto. You might have to cut the mozzarella bit so it fits the slice of toast.
Add a fresh basil leaf to each piece
Cut up the cherry tomatoes. First cut fully in half, then slice halfway through.
Place halved cherry tomatoes on top.
Cut black olives in half and place at the top of the sliced cherry tomatoes (as the head of the ladybug)
Finally take the Trader Joe’s Balsamic Glaze, pour some out and then use the pointy end of a utensil to dot the glaze onto the tomatoes as the ladybug’s spots. (we did this because too much glaze comes out of the bottle for small spots.
