Lemon Pasta with Salmon

Ingredients

  • 1/2 package lemon pasta

  • 2 filets of salmon

  • 1/3 cup dry white wine (sauvignon blanc)

  • 1 tbsp honey

  • 1/8 cup fresh lemon juice

  • 1/2 tbsp fresh rosemary, finely chopped

  • 1/4 tsp salt

  • 1/8 tsp freshly cracked black pepper

  • 1 1/2 cup heavy cream

  • 2 tbsp unsalted butter

  • 1/3 cup freshly grated parmesan cheese

Directions

  1. Pat salmon dry with paper towel and generously season with salt and pepper on both sides. Set aside

  2. Boil a large pot of salted water and cook lemon pasta for 6 minutes. Strain pasta and set aside

  3. Make cream sauce by adding wine, honey, lemon juice and rosemary to a pan. Bring to a simmer and reduce to cook off wine

  4. Add butter and stir until butter has melted. Add heavy cream

  5. Simmer on low until sauce has slightly thickened. Add salt, pepper and parmesan cheese. Stir together

  6. Add pasta to pan with cream sauce and stir to coat

  7. Cook salmon in a skillet over medium-high heat. Top pasta with salmon filet or shred salmon and add to pot with pasta

  8. Serve and enjoy!
