Ingredients

1 cup dried orzo
1/4 cup pistachios, chopped
1/4 cup parsley, chopped
1/2 cup sundried tomatoes, chopped
1 1/2 tbsp lemon juice
2 tbsp olive oil
1 tsp honey
1/8 tsp salt
1/8 tsp pepper

Directions

Cook orzo according to package instructions and set aside to cool
Prep dressing by whisking together lemon juice, olive oil, honey, salt and pepper
Transfer orzo to a large bowl and add pistachios, parsley and sundried tomatoes
Pour dressing over top and stir to combine
Enjoy!
