Lemon Pistachio Orzo

Ingredients

  • 1 cup dried orzo 

  • 1/4 cup pistachios, chopped

  • 1/4 cup parsley, chopped

  • 1/2 cup sundried tomatoes, chopped

  • 1 1/2 tbsp lemon juice

  • 2 tbsp olive oil

  • 1 tsp honey

  • 1/8 tsp salt

  • 1/8 tsp pepper

Directions

  1. Cook orzo according to package instructions and set aside to cool

  2. Prep dressing by whisking together lemon juice, olive oil, honey, salt and pepper

  3. Transfer orzo to a large bowl and add pistachios, parsley and sundried tomatoes

  4. Pour dressing over top and stir to combine

  5. Enjoy!
