
Loaded Air Fried Potato Salad

Ingredients
1 bag Trader Joe's Teeny Tiny Potatoes, sliced in thirds at an angle
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 ounces cooked pancetta (can sub a few slices of crumbled bacon)
1/2 cup Trader Joe's shredded unexpected cheddar (can sub any sharp cheddar)
1-2 tablespoons sliced green onions
1/2 sour cream or Greek yogurt
1-2 tablespoons milk
1 tablespoon mayo
1/2 teaspoon lemon juice
1/4 teaspoon each: salt, pepper, onion powder, dried parsley, dried chives, dried dill (or sub 1 tablespoon Ranch seasoning mix)
Ranch Dressing
Directions
Toss sliced potatoes with olive oil, salt, and pepper. Cook in air fryer at 400° for 10-15 minutes until tender
While potatoes cook, whisk all ranch dressing ingredients together in small bowl. Crisp pancetta in small skillet and drain grease on paper towel
As soon as the potatoes come out of the air fryer, toss together with all other ingredients. Note: the dressing should make a little over a 1/2 cup. Start with 1/3 a cup of the dressing and add more as needed
Serve warm and enjoy!
