
Loaded Air Fried Smashed Potatoes

Ingredients
1 bag baby yellow potatoes
1 tablespoon olive oil
2 tablespoons melted butter or ghee
1/2 teaspoon each salt, pepper, and garlic powder
1/3 cup of sour cream
3 slices crumbled cooked bacon
1/2 cup grated sharp cheddar
Chopped chives
Directions
Boil potatoes until fork tender for about 10 to 15 minutes. Drain and pat dry
Pour potatoes out on baking sheet and smash gently one by one using the bottom of a flat glass or a mason jar. Be careful not to smash too much so potatoes do not fall apart
Mix olive oil and melted butter together. Brush potatoes with mixture. Sprinkle with salt, pepper, and garlic powder
Cook in air fryer at 400° for about 10 minutes until potatoes start to crisp up
Sprinkle cheese over potatoes and cook another minute or two until cheese melts
Remove from air fryer and sprinkle with bacon, topped with dollop of sour cream, and chopped chives
