Pat loves anything that can be made in advance for meal prepping and these make ahead breakfast burritos hit the spot! They are perfect for busy weekdays or if you are hosting a holiday breakfast or brunch, they are super easy to serve! Heat 1/2 tbsp oil/butter in a pan on medium low heat
Scramble the eggs and add them to the pan. Cook them on medium low heat and when they are just set, add the cheese
Remove from heat, cover and let the cheese melt into the eggs. Add Egg mixture to a bowl
Slice up the sausage into coins. Cook on medium heat until starting to brown. Add the spinach to the pan and cook until wilted. Add sausage mixture to a bowl
Microwave each tortilla for 15 seconds so that it is pliable. Once it is soft, start constructing your burritos
First add a little bit of the egg mixture, then the sausage mixture, and top it with some hash browns pieces
Wrap up the burrito by folding over the sides, and then rolling it up
Make Ahead
You can freeze these so that you can eat them during the week. In order to do this, wrap each burrito in parchment paper and then aluminum foil. When you reheat these, remove the aluminum foil and cook the burrito in the parchment paper in the microwave for two minutes and 30 seconds
