1/2 cup mascarpone cheese, softened but still chilly
1/4 cup heavy cream, cold
1/4 cup powdered sugar
Vanilla extract, to taste
Optional Garnishes: Trader Joe's Salted Carmel or Fudge Sauce
Directions
Wash strawberries and dry thoroughly
You can cut the berries in 2 ways. Option 1: Keep the leaves on and slice the berries in half lengthwise. Option 2: Slice off the stem end. This will allow to strawberries to stand upright. With the pointed side up, slice an X into each berry. Take care not to slice all the way through!
Prepare the filling: In a deep bowl, add mascarpone, cream, powdered sugar, and vanilla. Beat with a handheld mixer until the mixture becomes thick and cloud like. This will happen fast, so keep an eye on it! A stand mixer works great here too
Add a star tip to a pastry bag. Add the filling to the bag. You can also use a ziplock bag here too! Just pop the filling in and snip off a tiny corner
Fill your berries! Pile the filing on top of the strawberry halves. For the standing berries, insert the star tip or snipped corner of the ziplock bag inside of the X. Fill the strawberries up to the top
For a little flavor and flair, drizzle caramel or fudge sauce on a plate/platter before adding the berries
