Mediterranean Pesto Salad

Ingredients

  • 1 whole cucumber medium quartered

  • ¼ cup halved green olives

  • 1 cup jarred artichokes

  • 1 lb cherry tomatoes halved

  • One red onion julienned

  • ¼ cup torn mint

  • ½ container of Trader Joe's kale pesto

  • ½ tsp Salt

  • 1 tsp Sumac

  • Pine nuts to garnish 


Instructions

  1. Prep all and mix together in bowl, garnish with pine nuts. 

  2. Enjoy!
