Mexican Street Corn Totchos

Ingredients

  • 3 cups Trader Joe's Potato Tots

  • 1/2 cup shredded mild cheddar cheese

  • 1/2 cup (prepared) Mexican Style Roasted Corn (keeping Cotija cheese separate)

  • 3 tbsp Organic Chunky Homestyle Guacamole

  • 2-3 tbsp Salsa Autentica

  • Optional garnish: cilantro

Directions

  1. Prepare potato tots according to package instructions, baking about 20 minutes flipping halfway through. Leave oven on

  2. Meanwhile, prepare roasted corn according to package instructions. Keep cheese packet separate

  3. Place tots on a small oven-safe baking sheet lined with parchment paper. Top with cheese. Return to oven, and bake about 2 more minutes, until cheese has melted

  4. Top with prepared corn, and sprinkle with desired amount of cotija cheese from the included packet

  5. Finish topping with guacamole, salsa, and cilantro

  6. Enjoy!
