
Mini Bacon Ranch Loaded Potatoes

Ingredients
1 1/2 lbs. baby potatoes
2 tbsp. olive oil
2-3 slices bacon
1/2 tsp. Ranch Seasoning Blend
1/2 cup Chicken Uncured Bacon Ranch Dip
2 tbsp. chopped chives
Directions
Preheat oven to 400°F
Toss potatoes with olive oil and ranch seasoning in a large bowl. Place in a prepared baking pan, and bake for 30-35 minutes, or until tender
While potatoes are baking, cook bacon until crispy, and crumble. Set aside
Spoon dip in a ziplock bag and cut off a small corner to pipe onto your potatoes
Once potatoes are cool enough to handle, cut a small slit in the center of each one
Pipe sour cream onto each potato, and top with crumbled bacon and chives
*If desired, you can put the potatoes back in the oven for 5-7 minutes until dip is warm
