Mini Bacon Ranch Loaded Potatoes

Directions

1. Preheat oven to 400°F

2. Toss potatoes with olive oil and ranch seasoning in a large bowl. Place in a prepared baking pan, and bake for 30-35 minutes, or until tender

3. While potatoes are baking, cook bacon until crispy, and crumble. Set aside

4. Spoon dip in a ziplock bag and cut off a small corner to pipe onto your potatoes

5. Once potatoes are cool enough to handle, cut a small slit in the center of each one

6. Pipe sour cream onto each potato, and top with crumbled bacon and chives

7. *If desired, you can put the potatoes back in the oven for 5-7 minutes until dip is warm
