Mini Baked Potato Bites

Ingredients

  • 1 1/2 lbs baby potatoes

  • 3 tbsp olive oil

  • 2 slices bacon

  • 1/2 tsp salt & pepper

  • 3/4 cup sour cream

  • 2 tsp ranch seasoning

  • 2 tbsp chopped scallions

Directions

  1. Preheat oven to 400ºF

  2. Toss potatoes with olive oil, salt, and pepper in a large bowl. Place in a prepared baking pan, and bake for 30-35 minutes, or until tender

  3. While potatoes are baking, cook bacon until crispy, and crumble. Set aside

  4. Combine sour cream with ranch seasoning in a bowl and mix until well combined

  5. Once potatoes are cool enough to handle, cut a small slit in the center of each one

  6. Pipe (or spoon) sour cream onto each potato, and top with crumbled bacon and scallions

  7. Serve & enjoy!
