One Pan Spicy Thai Noodles

Ingredients

    Sauce

  • 1/2 cup chicken broth

  • 1/4 cup soy sauce

  • 2 tablespoons Sriracha sauce

  • 1 tablespoon avocado oil

  • 1 tablespoon honey

  • 1/4 teaspoon grated ginger

  • Thai Noodles

  • 1 pound chicken breast

  • 1 tablespoon avocado oil

  • Salt and pepper to taste

  • 8 ounces broccolini, sliced into smaller pieces

  • 1/2 of a sliced red bell pepper

  • 1 large shallot thinly sliced

  • 1 small jalapeño (seeds and stems removed) thinly sliced

  • 1 cup of shredded carrots

  • 2 cloves minced garlic

  • 2 packages of Trader Joe's Thai Wheat Noodles 

  • Chopped basil & chopped peanuts for serving

Directions

  1. Whisk all sauce ingredients together and set aside

  2. Slice chicken into smaller strips. Season with salt and pepper to taste and sauté in large skillet sprayed with oil. Remove chicken and set aside

  3. Add one tablespoon of avocado oil to hot skillet. Add broccoli, peppers, jalapeño slices, and shallots to the pan. Allow to sauté for a few minutes and then add garlic, green onions, and shredded carrots and sauté a couple more minutes until all veggies are tender but still have a bite

  4. Add sauce and bring to a simmer. Add noodles straight from package, cover for 2-3 minutes to let noodles heat through. Use fork or tong to break up noodles

  5. Top with chopped basil and chopped peanuts and serve
