One Pot Greek Chicken & Zucchini Orzo

Ingredients

  • 2 lbs chicken breasts

  • Marinade

  • 1/4 cup Greek yogurt

  • 1/4 cup olive oil

  • Juice of one small lemon

  • 2 crushed garlic cloves

  • 1/2 teaspoon oregano

  • 1/4 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • Orzo

  • 2 tablespoons butter

  • 1 finely diced shallot

  • 1 clove of minced garlic

  • 1 finely diced zucchini

  • 1 cup orzo

  • 2 cups chicken broth

  • 1 tablespoon lemon juice

  • 1/2 cup grated Parmesan

  • 1/2 teaspoon dried parsley

  • Salt & pepper to taste

Directions

  1. Whisk all marinade ingredients together in bowl. Coat chicken in marinade and allow to sit at least 30 minutes

  2. Heat large skillet on medium heat and add one tablespoon of olive oil. Sear chicken on both sides until cooked through to 165°

  3. Transfer chicken to a plate and cover with foil so it stays warm

  4. In same skillet, add butter. When butter begins to melt, add shallots and garlic. Sauté for a minute or two and then add orzo and zucchini. Sauté for another minute or two until orzo begins toast a little (this gives it a nutty flavor)

  5. Add chicken broth and lemon juice, bring to a simmer, cover, and cook on medium-low heat for 10 minutes

  6. Fluff orzo with fork and stir in Parmesan cheese and parsley. Serve with salt and pepper to taste.
