One-Pot Italian Sausage & Orzo

Ingredients

  • 1 tbsp olive oil
  • 8 links Italian chicken sausage, sliced
  • 2 cups bone broth
  • 2 cups chicken broth
  • 16 oz orzo
  • 2 shallots, diced
  • ⅓ cup sun-dried tomatoes
  • 2 handfuls spinach
  • ½ cup grated parmesan cheese

Directions

  1. Heat olive oil in a large pan over medium heat. Add shallots and sauté until softened.

  2. Add chicken sausage and cook until slightly browned.

  3. Stir in sun-dried tomatoes, then add orzo, toasting it for extra flavor.

  4. Pour in bone broth and chicken broth, stir, and bring to a boil.

  5. Reduce heat to low, cover, and cook for 15 minutes or until orzo is fully cooked.

  6. Once cooked, gradually stir in parmesan and spinach until spinach is wilted.

  7. Serve & enjoy!
