
One-Pot Italian Sausage & Orzo

Ingredients
- 1 tbsp olive oil
- 8 links Italian chicken sausage, sliced
- 2 cups bone broth
- 2 cups chicken broth
- 16 oz orzo
- 2 shallots, diced
- ⅓ cup sun-dried tomatoes
- 2 handfuls spinach
- ½ cup grated parmesan cheese
Directions
Heat olive oil in a large pan over medium heat. Add shallots and sauté until softened.
Add chicken sausage and cook until slightly browned.
Stir in sun-dried tomatoes, then add orzo, toasting it for extra flavor.
Pour in bone broth and chicken broth, stir, and bring to a boil.
Reduce heat to low, cover, and cook for 15 minutes or until orzo is fully cooked.
Once cooked, gradually stir in parmesan and spinach until spinach is wilted.
