
One Pot Meatball Lasagna

Ingredients
1 tbsp. olive oil
1 cup chopped onion
4 cloves chopped garlic
One 12-oz. package chicken meatballs, halved
2 cups marinara sauce
1 1/4 cups water
1/2 tsp. salt
6 oz. Organic Mafalda Corta pasta
1 cup cottage cheese
1/2 cup shredded mozzarella cheese
Basil, for garnish
Directions
In a Dutch oven or large pot, heat olive oil over medium heat. Add onion and garlic, and cook until slightly tender, about 3 minutes
Add chicken meatballs and cook until browned, 3-4 more minutes
Add marinara, water, and salt. Increase heat to medium-high and bring to a boil
Stir in pasta and reduce heat to low. Cover and simmer for 10 minutes
- Remove lid and dollup spoonfuls of cottage cheese over top. Sprinkle with mozzarella. Cover and turn heat off. Let sit for 5-10 minutes until pasta is tender and cheese has melted.
