One Pot Meatball Lasagna

Ingredients

  • 1 tbsp. olive oil

  • 1 cup chopped onion

  • 4 cloves chopped garlic

  • One 12-oz. package chicken meatballs, halved

  • 2 cups marinara sauce

  • 1 1/4 cups water

  • 1/2 tsp. salt

  • 6 oz. Organic Mafalda Corta pasta

  • 1 cup cottage cheese

  • 1/2 cup shredded mozzarella cheese

  • Basil, for garnish

Directions

  1. In a Dutch oven or large pot, heat olive oil over medium heat. Add onion and garlic, and cook until slightly tender, about 3 minutes

  2. Add chicken meatballs and cook until browned, 3-4 more minutes

  3. Add marinara, water, and salt. Increase heat to medium-high and bring to a boil

  4. Stir in pasta and reduce heat to low. Cover and simmer for 10 minutes

  5. Remove lid and dollup spoonfuls of cottage cheese over top. Sprinkle with mozzarella. Cover and turn heat off. Let sit for 5-10 minutes until pasta is tender and cheese has melted.
  6. Serve and enjoy!
