Who doesn't love Trader Joe's famous orange chicken? Pat the Spatula can't get enough of this crispy goodness and has upgraded this dish by adding rice and veggies! It's very simple, comes together quickly, and a definite must try for those busy days and nights when you don't feel like cooking! Pat the Spatula hopes you give this a try and enjoy!
Rinse rice for 2-3 minutes until water runs clear (not cloudy) and add rice to a medium sized pot. Add 2 cups of water over top. Boil water, reduce to a simmer and cover with a lid. Cook rice until water dissipates (~15 mins). Fluff rice with a fork and cover with lid until ready to serve
Cook orange chicken in air fryer at 380ºF for 20 minutes. Shake halfway through
While chicken is cooking, heat a large skillet over medium heat. Sauté minced garlic with a splash of olive oil until garlic becomes fragrant. Add vegetables to pan and sauté for 10 minutes. Add one packet of mandarin orange sauce to pan and soy sauce. Reduce to low heat and cover with lid
When chicken finishes cooking in the air fryer, transfer to a large mixing bowl and toss with additional mandarin orange sauce packet
Add chicken to pan with stir fry vegetables and serve over cooked rice
