Parmesan Crusted Smashed Brussels Sprouts

Ingredients

  • bag of Brussels sprouts, trimmed

  • avocado oil

  • salt

  • garlic powder

  • black pepper

  • shredded Parmesan cheese

  • lemon juice

Directions

  1. preheat oven to 425º

  2. boil a pot of water and add some salt

  3. add trimmed Brussels sprouts and boil until tender, about 10 minutes

  4. place in ice bath

  5. squeeze out excess water and place on baking sheet

  6. with a cup, smash the Brussels sprouts

  7. coat with avocado oil, salt, garlic powder

  8. bake for 12 minutes, flip and bake for another 5. Add a pinch of Parmesan to each Brussels sprout and place back in oven for 10 minutes

  9. broil for 2 minutes

  10. once out of oven, squeeze juice of lemon and some cracked pepper over them

  11. enjoy!
