Who doesn't love a good sandwich? Pat is obsessed with this brand new Pesto Chicken Caprese Sandwich which will now be on repeat all summer long! Chicken breasts slathered in pesto, topped with fresh tomato slices, Burrata cheese, and toasted under the broiler, what could be better? Pat hopes you give this recipe a try and enjoy!
Whisk pesto and 1 tablespoon of olive oil together and coat chicken breasts with pesto mixture
Spray large skillet with olive oil spray and pan fry chicken breasts. Cook 4-5 minutes per side until chicken is cooked through (time may vary depending on size of chicken)
Top each piece of chicken with tomato slices and about one ounce of burrata cheese. Sprinkle with a pinch of salt and pepper
Place chicken under broiler for 3-5 minutes until burrata is melty and bubbly. Keep an eye on it so it doesn’t burn!
Mix butter and garlic powder together and slather on buns. Toast buns on griddle Pan until lightly toasted
Top buns with chicken breast, drizzle with balsamic glaze, and top with chopped fresh basil leaves
