
Pesto, Egg & Cheese Bagel

Ingredients
2 tbsp. Basil pesto
1 everything bagel
2 large eggs
1/2 cup shredded unexpected cheddar
Chives, for garnish
Chili onion crunch, optional
Directions
Preheat oven to 375ºF for 8-10 mins
Line a baking sheet with parchment paper
Divide pesto and spread into 2 circles on the sheet, evenly spaced. If desired, trim the bagel hole slightly larger, to fit your egg
Place each bagel half over the circles of pesto, face down
Crack an egg into the center of each bagel
Top with cheese. Bake for 8-10 minutes, or until yolk is cooked to your preference
Top with chives, chili onion crunch, and enjoy!
