
Pimento Cheese Twice Baked Potatoes

Ingredients
3 russet potatoes
1/2 cup Trader Joe’s pimento cheese dip
1 tbsp butter, melted
Salt & pepper to taste
Sour cream and freshly chopped chives to taste
Directions
Clean potatoes and pierce potatoes all over with fork
Microwave potatoes until tender (approximately 10-12 mins)
Allow potatoes to cool and slice in half lengthwise
Using a spoon, scoop potato flesh out of potato skins and place into a mixing bowl
Create potato filling by combining potato flesh and pimento cheese with a fork until smooth
Place potato skins onto a baking sheet and brush with melted butter on all sides. Sprinkle with salt
Bake potato skins at 450ºF for 5 minutes on both both sides
Take potato skins out of oven and stuff with potato mixture
Place back into oven for 5 mins. Once out of oven, top potatoes with freshly ground pepper
Top with a dollop of sour cream and chopped chives
