Pimento Cheese Twice Baked Potatoes

Ingredients

  • 3 russet potatoes

  • 1/2 cup Trader Joe’s pimento cheese dip

  • 1 tbsp butter, melted

  • Salt & pepper to taste

  • Sour cream and freshly chopped chives to taste

Directions

  1. Clean potatoes and pierce potatoes all over with fork

  2. Microwave potatoes until tender (approximately 10-12 mins)

  3. Allow potatoes to cool and slice in half lengthwise

  4. Using a spoon, scoop potato flesh out of potato skins and place into a mixing bowl

  5. Create potato filling by combining potato flesh and pimento cheese with a fork until smooth

  6. Place potato skins onto a baking sheet and brush with melted butter on all sides. Sprinkle with salt

  7. Bake potato skins at 450ºF for 5 minutes on both both sides

  8. Take potato skins out of oven and stuff with potato mixture

  9. Place back into oven for 5 mins. Once out of oven, top potatoes with freshly ground pepper

  10. Top with a dollop of sour cream and chopped chives

  11. Enjoy!
