Pat has a new Trader Joe's meal hack to share with you with these Pollo Asado Bowls! Using Trader Joe's marinated pollo asado and new Mexican style riced cauliflower, this bowl is bursting with spicy flavor! Pat could eat this bowl everyday that can also be made into tacos and burritos!
Options for serving: avocado, sour cream, cheese, salsa, tortillas, tortilla chips, sliced jalapeños, etc.
Directions
Cook Pollo Asado according to directions on package
Spray large skillet with avocado oil and sauté sliced peppers and onions until tender, season to taste with salt and pepper⠀
Set peppers and onions aside and cover with foil
In same skillet, spray again with avocado oil and add in bag of diced cauliflower. Sauté about 5-7 minutes to get rice a little toasty and liquid cooked out
Heat black beans in small saucepan (extra credit if you pour a little pickled jalapeño juice in the beans, SO good)
Squeeze half of a lime in cauliflower rice and mix in chopped cilantro. Season to taste with salt and pepper
Arrange grilled chicken, riced cauliflower, black beans, peppers & onions, and any other toppings you’d like in shallow bowl
