Ingredients

  • Trader Joe's Pollo Asado

  • Avocado oil spray

  • Trader Joe's Spicy Mexican Style Riced Cauliflower

  • 1 sliced red onion

  • 1 sliced bell pepper

  • Salt & pepper

  • 1 can of black beans

  • 1 tablespoon chopped cilantro

  • Juice of half of a lime

  • Options for serving: avocado, sour cream, cheese, salsa, tortillas, tortilla chips, sliced jalapeños, etc.

Directions

  1. Cook Pollo Asado according to directions on package

  2. Spray large skillet with avocado oil and sauté sliced peppers and onions until tender, season to taste with salt and pepper⠀

  3. Set peppers and onions aside and cover with foil

  4. In same skillet, spray again with avocado oil and add in bag of diced cauliflower. Sauté about 5-7 minutes to get rice a little toasty and liquid cooked out

  5. Heat black beans in small saucepan (extra credit if you pour a little pickled jalapeño juice in the beans, SO good)

  6. Squeeze half of a lime in cauliflower rice and mix in chopped cilantro. Season to taste with salt and pepper

  7. Arrange grilled chicken, riced cauliflower, black beans, peppers & onions, and any other toppings you’d like in shallow bowl

  8. Enjoy!
