Ingredients

  • 2 large potatoes, peeled and grated

  • ½ onion, grated

  • 1 egg

  • 1 tablespoon flour

  • salt & pepper to taste

  • oil for frying

Directions

  1. peel and slice potatoes

  2. chop onion

  3. place in a food processor or blender and blend until corse, not fully pureed

  4. place mixture in a cheesecloth or dish towel and squeeze out excess water- this is the trick to making them extra crispy!

  5. mix in flour, egg, salt & pepper

  6. in a shallow pan, heat enough oil so the entire bottom is covered

  7. scoop mixture into golf ball size portions and pat flat so they resemble pancakes and place in to the oil

  8. Once browned, flip and fry the other side

  9. Place on a paper towel lined plate once done to drain excess oil

  10. Serve with sour cream and apple sauce
