
Pumpkin Cake with White Chocolate Chips & Pumpkin Spice Frosting

Ingredients
1 box Trader Joe's Gluten Free Pumpkin Bread & Muffin Baking Mix
½ cup neutral oil
1 cup water
2 eggs
¾ cup white chocolate chocolate chips
1 pack cream cheese, room temperature
1 cup powdered sugar
1 ½ tsp pumpkin spice
1 tsp vanilla extract
Pumpkin Spice Frosting
Directions
Preheat the oven to 350F and line a 9x9 pan with parchment paper
Prepare mix according to package instructions
Stir in white chocolate chips
Move batter to the 9x9 parchment-lined baking pan and cook for 35 minutes or until middle is set and a toothpick inserted comes out clean
Let cool completely
While the cake is cooling, prepare your frosting
Pumpkin Spice Frosting
To a large bowl, add cream cheese and beat with a hand mixer until smooth
Add remaining ingredients and beat again until combined
Top cooled cake with frosting and enjoy!
