Pumpkin Cake with White Chocolate Chips & Pumpkin Spice Frosting

Ingredients

  • 1 box Trader Joe's Gluten Free Pumpkin Bread & Muffin Baking Mix

  • ½ cup neutral oil

  • 1 cup water

  • 2 eggs

  • ¾ cup white chocolate chocolate chips

  • Pumpkin Spice Frosting

  • 1 pack cream cheese, room temperature

  • 1 cup powdered sugar

  • 1 ½ tsp pumpkin spice

  • 1 tsp vanilla extract

Directions

  1. Preheat the oven to 350F and line a 9x9 pan with parchment paper

  2. Prepare mix according to package instructions

  3. Stir in white chocolate chips

  4. Move batter to the 9x9 parchment-lined baking pan and cook for 35 minutes or until middle is set and a toothpick inserted comes out clean

  5. Let cool completely

  6. While the cake is cooling, prepare your frosting

Pumpkin Spice Frosting

  1. To a large bowl, add cream cheese and beat with a hand mixer until smooth

  2. Add remaining ingredients and beat again until combined

  3. Top cooled cake with frosting and enjoy!
