
Pumpkin Cheesecake Stuffed French Toast

Ingredients
1 large egg
3 tbsp maple oat beverage
2-3 dashes of pumpkin pie spice
4 slices vegan brioche (or regular)
6 tbsp pumpkin cream cheese spread
1 oz candied pecans, chopped
1-2 tbsp butter, for skillet
Toppings: Powdered sugar, maple syrup, whipped cream
Directions
In a wide bowl, combine egg, maple oat beverage, and pumpkin pie spice. Whisk well
Evenly spread cream cheese on each piece of brioche (1 1/2 tbsp per piece)
Divide pecans between two slices, sprinkling over the cream cheese
Take remaining pieces of brioche and gently press to seal
Lightly dip each side of your stuffed French toast in the egg wash and place on a plate. (Don’t leave it in there too long or it will be soggy)
Sprinkle with extra pumpkin pie spice, if desired
Melt butter in a skillet over medium low heat
Once bubbling, add French toast, and cook about 2 minutes per side, or until golden brown
Top as desired, serve, and enjoy!
