Slice onion and sauté in a pan over medium heat with olive oil. Cook until onions are translucent and begin to brown
Slice french baguette and place onto baking sheet. Spray with olive oil and sprinkle with salt and pepper on both sides. Toast in oven at 400ºF until edges begin to brown
Take bread out of oven and spread mustard sauce onto each slice. Cover with Swiss cheese and roast beef. Place back into oven for ~5 minutes until cheese has melted
Take out of oven and top with caramelized onions and chives
