Roasted Tomato & Grains Salad

Ingredients

  • 1 16-oz package mini heirloom tomatoes

  • 1 1/2 tbsp extra virgin olive oil

  • 1 1/2 tbsp balsamic vinegar

  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning

  • 1/4 tsp each salt & pepper

  • 1 bag Multigrain Blend with Vegetables, thawed
  • 2 cups organic arugula
  • 1 cup ciliegine (fresh mozzarella)

Directions

  1. Preheat oven to 400ºF

  2. Add tomatoes to a small baking pan. In a small bowl, whisk oil, vinegar, garlic and seasonings. Pour over tomatoes and toss to coat

  3. Roast for 15-20 minutes, or until softened and splitting. Let cool slightly, about 15 minutes

  4. While tomatoes are cooling, add multigrain blend and arugula to a large bowl

  5. Once cooled, add tomatoes and any excess liquid (that is what gives the salad it’s flavor). Toss to coat. Add mozzarella, and toss again

  6. Serve and enjoy!
