
Roasted Tomato & Grains Salad

Ingredients
1 16-oz package mini heirloom tomatoes
1 1/2 tbsp extra virgin olive oil
1 1/2 tbsp balsamic vinegar
- 3 garlic cloves, minced
1 tsp Italian seasoning
1/4 tsp each salt & pepper
- 1 bag Multigrain Blend with Vegetables, thawed
- 2 cups organic arugula
- 1 cup ciliegine (fresh mozzarella)
Directions
Preheat oven to 400ºF
Add tomatoes to a small baking pan. In a small bowl, whisk oil, vinegar, garlic and seasonings. Pour over tomatoes and toss to coat
Roast for 15-20 minutes, or until softened and splitting. Let cool slightly, about 15 minutes
While tomatoes are cooling, add multigrain blend and arugula to a large bowl
Once cooled, add tomatoes and any excess liquid (that is what gives the salad it’s flavor). Toss to coat. Add mozzarella, and toss again
Serve and enjoy!
