Ingredients: 2 chicken sausage patties; 4 large eggs; 1/2 cup cottage cheese; Salt &amp; Pepper, to taste; 1 whole wheat English muffin (you won’t use all of it); 1/3 cup shredded cheddar or Mexican blend cheese

1/3 cup shredded cheddar or Mexican blend cheese

Directions

Preheat oven to 375ºF
Cook sausage patties according to package directions. Let cool slightly
Meanwhile, in a liquid measuring cup, whisk together eggs, cottage cheese, salt, and pepper
Cut English muffin into quarters
Spray a 6-cup muffin tin with cooking spray
Place 1 quarter of an English muffin at the bottom of each cup
Chop sausage patties and divide pieces between your cups
Pour egg mixture over the muffin and sausage pieces
Sprinkle the tops with shredded cheese. Bake until firm and golden brown, 18-20 minutes
