Sheet Pan Chicken Sausage & Roasted Veggies
Ingredients
1 Package Chicken Sausage, sliced
1 lb baby potatoes, quartered
4 large carrots, cut into chunks
1 package mini corn
1 bell pepper
Half small red onion
3 - 4 tbsp. olive oil
Italian Style Soffrito Seasoning
Salt & Pepper
Honey
Seasonings
Directions
Preheat oven to 425°F.
Prep the baby potatoes and carrots then season with desired amount
Lightly coat in olive oil then spread oiut on the sheet pan.
Roast for 15 mins
Prep all other veggies, coat in olive oil and season.
Take out the potatoes and carrots, add other veggies, slice up the sausages and add everything to the same sheet pan.
Roast together for another 20 - 25 mins until potatoes are fork-tender and veggies are slightly caramelized
Optional to cover in honey and a bit of lemon juice for some extra flavor!
Serve with a side salad and enjoy!
