Cinco de Mayo is almost here and Golden Hour is so excited to share this super easy but incredibly tasty shrimp ceviche recipe with you! Golden Hour thinks Trader Joe's Red Argentinian Shrimp is the best fish to use for this dish but you can use any firm white fish for this recipe! Don't worry about using raw fish, the citrus juices make the fish safe for consumption! You can serve this alone or with chips, you can even make tacos! Golden Hour hopes you enjoy!

1 bag Trader Joe's Red Argentinian Shrimp
Cherry or pearl tomatoes
Red onion
Cucumber
Avocado
Lime
Cilantro
Orange, lemon, or lime juice
Salt to taste
Optional: jalapeño
Tortilla chips for serving
Directions
Defrost the shrimp- either by placing in a bowl with cold water or in the fridge overnight
Slice tomatoes, onion, cucumber and place in a bowl
Once raw shrimp is defrosted, cut into small pieces and add to the bowl
Add cilantro
Freshly squeeze orange, lemon, or limes juices into the bowl. You can also use orange juice. You want enough to cover the ingredients but also don't want them to be drowning in juice
Let marinate for at least an hour before serving
Add salt as needed
Top with fresh avocado and serve with chips or on its own
