Shrimp Ceviche

Ingredients

  • 1 bag Trader Joe's Red Argentinian Shrimp

  • Cherry or pearl tomatoes

  • Red onion

  • Cucumber

  • Avocado

  • Lime

  • Cilantro

  • Orange, lemon, or lime juice

  • Salt to taste

  • Optional: jalapeño

  • Tortilla chips for serving

Directions

  1. Defrost the shrimp- either by placing in a bowl with cold water or in the fridge overnight

  2. Slice tomatoes, onion, cucumber and place in a bowl

  3. Once raw shrimp is defrosted, cut into small pieces and add to the bowl

  4. Add cilantro

  5. Freshly squeeze orange, lemon, or limes juices into the bowl. You can also use orange juice. You want enough to cover the ingredients but also don't want them to be drowning in juice

  6. Let marinate for at least an hour before serving

  7. Add salt as needed

  8. Top with fresh avocado and serve with chips or on its own

  9. Enjoy!
