Southwestern Breakfast Skillet

Ingredients

  • 2 medium sweet potatoes, cubed

  • 1/3 cup black beans

  • 1/3 cup corn

  • 2 cups kale

  • 3 eggs

  • 1/2 avocado (or more)

  • 1 tbsp avocado oil

  • Trader Joe’s Chile Lime Seasoning

  • OPTIONAL: sliced cayenne pepper & fresh herbs, to garnish

Directions

  1. Heat the avocado oil in a frying pan on stovetop over medium heat

  2. Add in the cubed sweet potatoes & chile lime seasoning

  3. Sauté for 10-12 minutes, or until sweet potatoes have begun to soften

  4. Add in the kale, black beans & corn, and continue sautéing for a few minutes, until the kale begins to wilt

  5. Create 3 wells in your mixture to crack the eggs in

  6. Crack the eggs, and cover the pan for a few minutes, until the eggs have cooked through

  7. Sprinkle additional chile lime seasoning and garnish with sliced avocado and cayenne pepper slices & fresh herbs (if using)

  8. Enjoy!

Recipe Note

It’s recommended to serve with warm tortillas or bread, to dip into the egg yolks!
