
Spinach Artichoke Dip

Ingredients
1 package chopped frozen spinach
1 can artichoke hearts, chopped
1 shallot, minced
2 cloves garlic, minced
1 16oz container sour cream
½ cup Parmesan
8oz cream cheese, softened
Salt & pepper to taste
Directions
In a large pan, sauté the shallot and onion until fragrant
Pour in the chopped spinach and artichokes. Let simmer and cook for 3-4 minutes and add in the sour cream, cream cheese
Continue to cook and whisk until the cream cheese melts into the spinach
Add in the Parmesan. Whisk on a low flame and continue to stir until all ingredients are combined
Place into an oven-safe dish and bake for 15 minutes
Serve with veggies, chips, or crackers
