Spinach Artichoke Dip

Ingredients

  • 1 package chopped frozen spinach

  • 1 can artichoke hearts, chopped

  • 1 shallot, minced

  • 2 cloves garlic, minced

  • 1 16oz container sour cream

  • ½ cup Parmesan

  • 8oz cream cheese, softened

  • Salt & pepper to taste

Directions

  1. In a large pan, sauté the shallot and onion until fragrant

  2. Pour in the chopped spinach and artichokes. Let simmer and cook for 3-4 minutes and add in the sour cream, cream cheese

  3. Continue to cook and whisk until the cream cheese melts into the spinach

  4. Add in the Parmesan. Whisk on a low flame and continue to stir until all ingredients are combined

  5. Place into an oven-safe dish and bake for 15 minutes

  6. Serve with veggies, chips, or crackers

  7. Enjoy!
