Spinach Artichoke Spaghetti Squash Bake

Ingredients

  • 1 large spaghetti squash, cooked

  • 1 16oz container of cottage cheese

  • 1 16oz bag of frozen chopped spinach, thawed

  • 1 16oz bag of frozen artichoke hearts, thawed

  • 1 yellow onion, chopped

  • 4 minced garlic cloves

  • 1 tablespoon olive oil

  • ¾ cup of shredded mozzarella

  • Salt, to taste

Directions

  1. Preheat oven to 400 degrees

  2. In a food processor, blend up cottage cheese until smooth, place in bowl and set aside

  3. Heat olive oil on skillet at medium heat, add chopped onion, cook until soft

  4. Add garlic and cook until fragrant

  5. Add artichoke hearts and spinach and cook until heated through

  6. Put spinach artichoke mixture in food processor and pulse until chopped fine

  7. Add mixture to cottage cheese and stir. Salt, to taste

  8. Add in spaghetti squash, mix well

  9. Pour mixture into 9x13 casserole dish and top with mozzarella cheese

  10. Bake for 45 minutes or until cheese begins to brown

  11. Enjoy!
