Pat can't believe Valentine's Day is this weekend! Pat can't wait to indulge in all the things and is so excited to share this new Steak & Brie towers recipe with you! These are perfect as an appetizer for a homemade dinner with your special someone or your gals! Or, if you aren't celebrating, treat yourself anytime!

Ingredients
Steak of your choice (8oz strip steak is best)
1 sweet onion, sliced into rings
Trader Joe's Balsamic Glaze
Trader Joe's Herbs De Provence
Trader Joe's Everyday Seasoning
Salt to taste
1-3 tablespoons of EVOO or butter
Trader Joe's Puff Pastry, thawed but still cold
1 egg
Brie cheese (or any melty cheese of your choice)
Garnish: fresh herbs, scallions
Directions
Prepare Filling
Rub a little olive oil on steak. Rub seasonings and salt on both sides. Let steak rest for 30 mins up to one day ahead. The longer the better!
Meanwhile add onions and a splash of butter/evoo in a skillet. Cook gently over medium heat until they become brown and soft (10-20 minutes). Sprinkle seasonings on the onions and add a squeeze of balsamic glaze. Place them in a small bowl
Grill/Panfry/Airfry your steak until desired doneness
Cover the steak loosely with foil and let it rest for 10 minutes. When cooled, cut into thin slices with a sharp knife.
Prepare Towers
Preheat oven to 400 degrees
Make an egg wash for the puff pastry: crack an egg in a small bowl, add a splash of water, and whisk lightly
Roll out a sheet of puff pastry. With a large cookie cutter, cut out 4 circles. Take a smaller cutter and make a hole inside of 1 circle. It should look like ring. A set will have 3 circles and a ring. This will make one tower. Continue to make these sets of circles until the entire pastry is used
Brush all circles and rings with egg wash. Next, stack three full circles on top of each other. Top all of the stacks with the ring
Place all the towers on a parchment lined baking sheet. Bake for 10-15 minutes, until golden brown and puffed up.The towers will have a puffy middle. You can cut it out to make more space for the filling, or leave it as is
Fill Towers
Add steak slices, onions, and cheese to each tower. Be generous and pile high!
Place them under the broiler until the cheese melts
Garnish with a drizzle of balsamic glaze and herbs
