Strawberry Rhubarb Chia Jam

Ingredients

  • 3 cups rhubarb, chopped into small cubes

  • 3 cups strawberries, quartered

  • ¼ cup chia seeds

  • 1 cup organic cane sugar or granulated sugar alternative

  • Juice of 1 lemon – about 2-3 tbsp

Directions

  1. Add all ingredients to a saucepot over medium heat and cook until the sugar dissolves, stirring often

  2. Turn heat to high and bring mixture to a rolling boil – cooking for about 10 minutes and stirring every minute

  3. To remove chunks and achieve a more jam-like texture, use an immersion blender on the low setting to blend until desired consistency is achieved

  4. Allow to cool completely then transfer to a glass jar with an air tight lid and store in the fridge

  5. Enjoy!
