Ingredients

  • 1 pound ground beef (can use ground turkey or chicken)

  • Half of a diced onion

  • 2 minced cloves of garlic

  • 2 tablespoons chopped pickled jalapeños (can sub 1 tablespoon of fresh jalapeño instead but the pickled adds a lot flavor. You can also add a couple splashes of the pickled jalapeño juice)

  • 1 tablespoon taco seasoning

  • 1 tablespoon taco sauce

  • 1 tablespoon Trader Joe's Chili Lime Seasoning (can sub an additional tablespoon of taco seasoning instead)

  • 1 can of diced tomatoes with green chilis

  • 1 can of drained and rinsed pinto beans

  • 1 cup of frozen corn

  • 2 cups of beef broth

  • 2 tablespoons chopped fresh cilantro

Directions

  1. Start by browning ground beef. When meat begins to brown, add in onions, garlic, and jalapeños. Sauté for a few minutes until translucent

  2. Add in seasonings and sauté for a couple of minutes more

  3. Add in taco sauce, beef broth, tomatoes with green chilis, pinto beans, and corn. Cover and simmer for 15 to 20 minutes on medium-low

  4. Stir in fresh chopped cilantro and a squeeze of lime juice if you have it

  5. Top with favorite toppings and enjoy!

Optional Toppings: sour cream, shredded cheddar, lime wedges, avocado, tortilla chips
