Pat thinks tacos are always a good idea, even in the form of a soup! There is so much flavor and it's so versatile, ingredients and toppings can be swapped out to your heart's desire! Pat hopes you try this recipe next time you make soup!

Ingredients
1 pound ground beef (can use ground turkey or chicken)
Half of a diced onion
2 minced cloves of garlic
2 tablespoons chopped pickled jalapeños (can sub 1 tablespoon of fresh jalapeño instead but the pickled adds a lot flavor. You can also add a couple splashes of the pickled jalapeño juice)
1 tablespoon taco seasoning
1 tablespoon taco sauce
1 tablespoon Trader Joe's Chili Lime Seasoning (can sub an additional tablespoon of taco seasoning instead)
1 can of diced tomatoes with green chilis
1 can of drained and rinsed pinto beans
1 cup of frozen corn
2 cups of beef broth
2 tablespoons chopped fresh cilantro
Directions
Start by browning ground beef. When meat begins to brown, add in onions, garlic, and jalapeños. Sauté for a few minutes until translucent
Add in seasonings and sauté for a couple of minutes more
Add in taco sauce, beef broth, tomatoes with green chilis, pinto beans, and corn. Cover and simmer for 15 to 20 minutes on medium-low
Stir in fresh chopped cilantro and a squeeze of lime juice if you have it
Top with favorite toppings and enjoy!
