Trader Joe's Fudgy Chocolate Sunflower Butter Quinoa Cake

If you're looking for something drool worthy and super simple to make, then this has your name on it. The combination of chocolate + sunflower seed butter create a decadent dessert that with a few tricks, can transform a boxed cake mix into a 5 star dessert. 

what you need:

  • Trader Joe's Fudgy Chocolate Quinoa Loaf & Cake Mix (comes with dry mix and chocolate fudge mix)
  • 3/4 cup olive oil
  • 1.5 cups milk of any kind
  • 4 large eggs
  • drizzle of TJ’s sweetened sunflower seed butter

what you COULD add (for extra flare):

  • 1/4 cup multi colored quinoa
  • 1/3 cup unsweetened shredded coconut
  • cacao powder (garnish)
  • cinnamon (garnish)

INSTRUCTIONS: 

Step 1: Preheat the oven to 350 degrees. Make sure you have a middle rack ready. Grease a bread loaf pan with oil. Cooking spray is easy

Step 2: If you’re doing the quinoa, pop it. Preheat a large pan on low heat. Add quinoa. Cook til you smell a lovely aroma. Then remove from heat and set aside. Takes about 5 minutes. Don’t burn it ;)

Step 3: In a large bowl, whisk eggs. Add milk and oil. Then stir in with a spoon the cake mix. Sprinkle in the coconut. Don’t need to go nuts with the stirring. Just blend it til u don’t see any more dry cake mix.

Step 4: Pour the batter into the prepared bread pan. Lick the spoon. Top the batter with the popped quinoa. Bake for 40 minutes. Or until the cake has mostly set.

Step 5: Pull out the cake. Drizzle with sunflower butter. Sprinkle some cacao and cinnamon over that. Bake for an additional 15 to 20 minutes. If u poke it with a toothpick and the toothpick comes out clean, ur good. Inner temp is best at about 210 degrees.

Step 6: Wait til it’s not PIPING hot. Eat. :)

Note: 

I opted to skip mixing in the chocolate fudge pack. Felt it plenty sweet as is but if you’re lookin’ for a POWPOW sugar sitch, mix it in at either the egg phase or with the sunflower butter. My plan is to save it and knock it down with some strawberries in the futures.
