Tropical Kabobs

Ingredients

  • 1 lb bag Trader Joe's Argentinian shrimp

  • 1 fresh pineapple, cubed

  • Trader Joe's Chile Lime seasoning

  • Glaze

  • 3-4 tablespoons butter

  • 1/3 cup pineapple jam

  • 1-2 tablespoons soy sauce

  • 1-3 tablespoons Orange Muscat Vinegar (or another vinegar of your choice)

  • Juice & zest of 1 lime

  • Red pepper flakes, to taste

Directions

  1. If using wooden skewers, soak them in water for at least 30 minutes before grilling

  2. Season shrimp and pineapple cubes with chile lime seasoning

  3. Thread skewers with shrimp and pineapple

  4. Combine glaze ingredients in a small saucepan. Cook over medium-high heat until bubbly

  5. Set some of the glaze aside for dipping

  6. Baste the skewers with a thin layer of glaze

  7. Grill skewers for 5-6 minutes, basting with glaze until shrimp is bright pink and firm

  8. Serve with remaining glaze and rice

  9. Enjoy!
