Truffle Mashed Potatoes & Cauliflower

Ingredients

  • 1 head cauliflower

  • 1 1/2 pounds of potatoes

  • 1 cup broth or water

  • 3 tablespoons Trader Joe's Truffle Dip (can sub cream cheese)

  • Truffle powder, to taste

  • Salt, to taste

  • Fresh parsley to garnish

Directions

  1. Chop cauliflower into small florets

  2. Peel and chop potatoes

  3. Add cauliflower and potatoes to Instantpot**, cover with broth

  4. Cook on high pressure for 7 minutes, natural release

  5. Stir together to mash cauliflower and potatoes until smooth

  6. Add 3 tablespoons of Truffle Dip, truffle powder and salt

  7. Top with more truffle powder and garnish with parsley

  8. Enjoy!

Recipe Note

**If you don’t have an Instantpot, you can cook these in a pot over the stove until the cauliflower and potatoes are tender.
