
Truffle Mashed Potatoes & Cauliflower

Ingredients
1 head cauliflower
1 1/2 pounds of potatoes
1 cup broth or water
3 tablespoons Trader Joe's Truffle Dip (can sub cream cheese)
Truffle powder, to taste
Salt, to taste
Fresh parsley to garnish
Directions
Chop cauliflower into small florets
Peel and chop potatoes
Add cauliflower and potatoes to Instantpot**, cover with broth
Cook on high pressure for 7 minutes, natural release
Stir together to mash cauliflower and potatoes until smooth
Add 3 tablespoons of Truffle Dip, truffle powder and salt
Top with more truffle powder and garnish with parsley
Enjoy!
Recipe Note
**If you don’t have an Instantpot, you can cook these in a pot over the stove until the cauliflower and potatoes are tender.
