Truffle season is still going strong and Flippin' Pat is so excited to share the most delicious breakfast pizza recipe with you! The truffle pesto and sliced fresh mushrooms make this pizza a perfect savory addition to any holiday breakfast or brunch! Flippin' Pat hopes you give this a try and enjoy!
2 tbsp Trader Joe’s truffle and mushroom flavored pesto
1 tbsp parsley, chopped
Salt and pepper to taste
Directions
Lightly flour a work surface and let pizza dough rest at room temp for 30 minutes
Split pizza dough into 2 pieces and work dough into rounds. Leave edges of pizza dough raise to define outer crust
Begin building your pizzas by covering each piece of dough with olive oil. Top with torn provolone followed by shredded mozzarella
Bake @ 400 degrees for 10 minutes or until cheese begins to brown
Take pizzas out of oven and top with mushrooms. Place mushrooms around edges of pizzas, reserving the center of each pizza for the eggs. Drizzle with pesto
Crack 1 egg into the middle of each pizza and place pizzas back into oven for 8 minutes or until egg begins to set
Take out of oven to rest and sprinkle with salt, pepper and parsley
