It's almost summer and Pat is so excited for sweet treats to enjoy all season long! Trader Joe's releases Ube Mochi Pancake & Waffle Mix in the late spring and if you are lucky enough to snag a box, Pat has the perfect recipe to make a peach cobbler! Serve with ube ice cream or southern peach crisp ice cream (or both!) for a tasty dessert! Pat hopes you give this recipe a try and enjoy!

Ingredients

1 1/3 cup Trader Joe's Ube Pancake Mix
1 jar yellow cling peaches
1/4 cup brown sugar
3/4 cup white sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp vanilla extract
1/2 cup butter
1 cup milk
For serving: Ube ice cream, Southern Peach Crisp ice cream, or vanilla ice cream and crumbled Ube Tea Cookies

Directions

Preheat oven to 350º
In large bowl, stir together pancake mix, vanilla, cinnamon, and nutmeg
Pour into greased baking pan
Melt butter and stir into pancake batter
Slice peaches length wise 2-3 times
In a separate bowl, stir together white and brown sugar with sliced peaches
Spoon peach mixture over pancake batter
Bake for 60 minutes or until golden
Crumble tea cookies on top
Serve warm with ice cream
