Vegan Apple Cider Coffee Cake

Ingredients

  • ⅓ cup melted coconut oil

  • 2 tbsp chia seeds soaked in 5 tbsp water (to make chia egg)

  • ½ cup apple cider spread from Trader Joe's (or maple syrup)

  • ½ cup apple sauce

  • ½ cup coconut sugar

  • 2 cups almond flour

  • ½ cup tapioca or arrowroot flour

  • 2 tsp baking soda

  • 2 tsp cinnamon

  • ½ tsp salt

  • Crumble Topping Ingredients

  • 1/2 cup almond flour

  • ½ cup tapioca flour or arrowroot

  • 1 tbsp cinnamon

  • ¼ tsp salt

  • 3 tbsp melted coconut oil

  • ¼ cup coconut sugar

Directions

  1. Preheat oven 350*F

  2. In a bowl, mix together coconut oil, soaked chia seeds, apple cider spread, apple sauce, and coconut sugar

  3. In a separate bowl mix the almond flour, tapioca flour, baking soda, cinnamon, and salt

  4. While mixing, add the dry to the wet ingredients

  5. Pour into an 8x8 greased pan and bake for 15 minutes

  6. While coffee cake is baking, in a bowl, mix the crumble toppings with your hands, it should be crumbly

  7. After 15 minutes, add the crumble toppings to the coffee cake and return to the oven for another 20 minutes

  8. After 20 minutes, check the center with a fork. If you remove and it is clean, it is done

  9. Let it cool and enjoy!
