Vegetarian Muffuletta

Ingredients

    Sandwich Fixings

  • Bread loaf of choice (thicker breads are best)

  • Red bell pepper

  • 1 Eggplant

  • Cheese of choice (manchego, swiss or provolone are best)

  • Olive Salad

  • 3/4 cup green pimento olives

  • 1/4 cup kalamata olives

  • 2-3 tablespoons sliced pepperoncini

  • 2 tablespoons capers

  • 1 clove garlic

  • 1-2 tablespoons lemon juice

  • 2 tablespoons red wine vinegar

  • 2 tablespoons fresh parsley

  • pepper to taste

  • dried oregano

  • red pepper flakes

  • 1-2 tablespoons olive oil

Directions

  1. Roast red peppers, either in the oven or open flame until charred and collapsed

  2. Slice eggplant into rounds and lightly salt each side

  3. Spray with olive oil and splash a little liquid aminos (or soy sauce) on each piece and sprinkle with smoked paprika

  4. Air fry at 370ºF for about 5 minutes. Flip halfway through and cook about 5 more minutes

  5. Prepare the olive salad by adding all the ingredients to a blender or food processor and pulse until coarsely chopped

  6. Build your sandwich by toasting bread, layering olive salad, cheese, eggplant, and red peppers

  7. Enjoy!
