
Za'atar Roasted Cauliflower, Quinoa & Greek Salad

Ingredients
Quinoa
1 tablespoon herbed tahini sauce
lemon juice
salt
water (to thin)
1 head of cauliflower
avocado oil
1/4 cup Za'atar seasoning
cucumber
mini sweet bell peppers
tomatoes
red onion
chickpeas
parsley
lemon juice
red wine vinegar

Directions
make quinoa
Za'atar Roasted Cauliflower
preheat oven to 425º
chop cauliflower into small florets
coat with avocado oil
toss with za'atar
bake for 30 minutes or until crispy
Greek Salad
chop all veggies and drain and rinse chickpeas
combine in bowl
add lemon juice and red wine vinegar
mix well
Herbed Tahini Dressing
combine herbed tahini sauce with lemon juice, salt and water to thin
