Za'atar Roasted Cauliflower, Quinoa & Greek Salad

Ingredients

  • Quinoa

  • Herbed Tahini Dressing

  • 1 tablespoon herbed tahini sauce

  • lemon juice

  • salt

  • water (to thin)

  • Za'atar Roasted Cauliflower

  • 1 head of cauliflower

  • avocado oil

  • 1/4 cup Za'atar seasoning

  • Greek Salad

  • cucumber

  • mini sweet bell peppers

  • tomatoes

  • red onion

  • chickpeas

  • parsley

  • lemon juice

  • red wine vinegar

Directions

  1. make quinoa

Za'atar Roasted Cauliflower

  1. preheat oven to 425º

  2. chop cauliflower into small florets

  3. coat with avocado oil

  4. toss with za'atar

  5. bake for 30 minutes or until crispy

Greek Salad

  1. chop all veggies and drain and rinse chickpeas

  2. combine in bowl

  3. add lemon juice and red wine vinegar

  4. mix well

Herbed Tahini Dressing

  1. combine herbed tahini sauce with lemon juice, salt and water to thin
