Zucchini Taco Boats

Ingredients

  • 3 zucchini, halved longways and seeds scooped out

  • 1 tbsp avocado oil

  • 1-2 lbs ground beef

  • 1 can black beans, drained and rinsed in cold water

  • 1 tsp pink salt, or to taste

  • 1 tsp ground black pepper, or to taste

  • 3 tsp garlic powder

  • 2 tbsp chili powder

  • 1 tbsp dried minced onion

  • 1 tsp oregano

  • ¼ cup taco sauce, plus extra for drizzle before baking

  • Cheese of choice, however much you want – I used Trader Joe’s cheddar style goat cheese

  • Optional- Sprinkle of nutritional yeast on top, chopped cilantro or parsley, squeeze of lime juice

Directions

  1. Preheat the oven to 400º and line a baking sheet with parchment paper

  2. In a pan over medium heat, warm avocado oil then add ground beef

  3. As the beef cooks, break apart into crumbles then add seasoning, taco sauce, mix until evenly distributed, then set to simmer until about ¾ of the way cooked through

  4. Arrange prepared zucchini halves on baking sheet and spoon beef mixture into each boat

  5. Top with cheese, and bake for 15 minutes. Add extra cheese and a drizzle of taco sauce or other toppings and bake 5 minutes more

  6. Allow to cool at least 10 minutes before serving

  7. Enjoy!
