Pat loves using an air fryer for quick a delicious meals and is so excited to share this new Air Fried Chicken Milanese recipe, made two ways! Normally a fried dish, Chicken Milanese is a favorite Italian dish. Traditionally, Chicken Milanese is served with an arugula salad, Parmesan shavings, and lemon wedges but Pat wanted to switch it up and add Parmesan butter noodles, sliced cherry tomatoes and balsamic glaze. 4 chicken cutlets (or two large breasts sliced in half lengthwise, pounded thin)
3/4 cup panko breadcrumbs
1/4 grated Parmesan
1 egg
1 tablespoon milk or half & half
1 teaspoon Italian seasoning
Salt and pepper to taste
Olive oil spray
For serving: 8 oz Capellini pasta
1/4 cup butter
1/4 cup grated Parmesan
Arugula
Parmesan shavings
Lemon wedges
Optional: cherry tomatoes, balsamic glaze
Directions
Season chicken breasts with salt & pepper
Prepare dipping station: beat egg with milk and 1/2 teaspoon of Italian seasoning in one bowl. In second bowl, mix panko breadcrumbs, grated Parmesan, and other 1/2 teaspoon of Italian seasoning
Coat chicken in egg mixture and then in breadcrumb mixture. Press breadcrumb mixture into chicken using fingers
Place coated chicken breasts in basket of air fryer and spray them with olive oil spray (this helps gets them crunchy so don’t skip this part). Cook at 380° for about 10 minutes until cooled through
Cook pasta according to instructions on the package. Add butter and Parmesan and toss together
Arrange pasta serving on plate, top with chicken breast, arugula, Parmesan shavings, lemon wedges, and if using; cherry tomatoes and balsamic drizzle
