  • 3/4 cup panko breadcrumbs

  • 1/4 grated Parmesan

  • 1 egg

  • 1 tablespoon milk or half & half

  • Salt and pepper to taste

  • For serving: 8 oz Capellini pasta

  • 1/4 cup grated Parmesan

  • Arugula

  • Parmesan shavings

  • Lemon wedges

  • Optional: cherry tomatoes, balsamic glaze

Directions

  1. Season chicken breasts with salt & pepper

  2. Prepare dipping station: beat egg with milk and 1/2 teaspoon of Italian seasoning in one bowl. In second bowl, mix panko breadcrumbs, grated Parmesan, and other 1/2 teaspoon of Italian seasoning

  3.  Coat chicken in egg mixture and then in breadcrumb mixture. Press breadcrumb mixture into chicken using fingers

  5. Cook pasta according to instructions on the package. Add butter and Parmesan and toss together

  6. Arrange pasta serving on plate, top with chicken breast, arugula, Parmesan shavings, lemon wedges, and if using; cherry tomatoes and balsamic drizzle
